Traditional Indian food almost always uses fresh ingredients and involves making dishes from scratch, which means less preservatives and overall healthier food. Indian cooking uses spices like turmeric, ginger, garlic, and green chilies – all of which have medicinal and healing properties. Tandoor is prepared with an open charcoal flame clay oven at a temperature of 900 °F, which gives the smoky flavor to the meats, vegetables and breads.
A common delicacy of India cooked with onions, ginger, garlic, cloves, cinnamon, coriander, turmeric, and pan roasted cumin to a medium thick consistency.
Korma is a dish originating in the Indian subcontinent, consisting of meat braised with yogurt or cream, water or stock, and spices to produce a thick sauce or glaze with coconut, and topped with cashews and raisins.
