Chicken vindaloo is a hot and spicy dish from the Goa region of India. It is typically featured on menus at Indian restaurants. The taste comes from a unique blend of the fat in the chicken, garlic, vinegar and chili. The process: We blend turmeric, cardamom, cinnamon, coriander, cloves, cumin, paprika, and cayenne pepper in a pot over medium-low heat until the spices are fragrant. Then olive oil, onion, garlic, and ginger is added.
